After an abnormally long drought between visits, I drove up to visit Afsi for a weekend of card games, visiting with friends and family, and sacrificing some sweat to the botany gods in hopes of a colorful season in her garden.
Our heroine put her creative culinary excellence on display; taking a few ideas and ingredients and adding her panache to prepare a Game Night spread that was as impressively presented as it was delicious.
Preparing a white wine sauce while water for pasta heats.
-heat 1 pat of butter, 1 minced garlic clove, and a 1/4 cup of olive oil until garlic begins to brown.
-add pasta to boiling water
-add 1 cup white wine and 1/4 cup lemon juice to saucepan, heat 3 minutes
- add peeled, frozen shrimp and sautee 8-10 minutes or until man/womanstinct tells you shrimp are done
-turn saucepan to low heat
-drain noodles and add to sauce
-add spinach leaves to wilt 3-5 minutes
Behold: shrimp scampi, a la Afsi
It seemed like a blink went by and I turned from my assistant duties to discover a homemade spinach- to call this a dip would be a promotion for dips everywhere- delicacy, served in a soft sweet bread bowl.
